So the joy may travel farther
And linger a little longer
This is the  story of our Baked-to-Bar
 
This holiday season, we are  sharing something we have been dreaming about: our very first chocolate bars. Bars inspired by our  baked treats you have come to love. We did not begin with cacao beans. We began with what started it all for us, our baked treats. So, not Bean-to-Bar, but Baked-to-Bar.

We do not roast or ferment cacao ourselves, a craft we hold in high regard. Our role begins with baking, with carefully selected couverture chocolate and ingredients, shaped into flavors we love. 

Vol 1:  Caramel Cheese Bar

Our first creation is the Caramel Cheese Bar, inspired by our beloved caramel cheese cookies.  Edam Parmesan cheese cookies, house-made caramel, a delicate meringue glaze, all encased in smooth, gourmet-grade caramelized white chocolate.

Vol 2: Banana Espresso Nougatine (BEN) Bar


Next is the BEN Bar, a tribute to our Baby BEN cake. Freeze-dried banana reflects the mashed banana fillings, coffee-infused caramelized white chocolate echoes the espresso buttercream, and crunchy nougatine brings back the cake’s signature texture. 

Why Caramelized White Chocolate?

Flavor harmony!  It’s warm, toffee-like notes complement the Caramel Cheese and BEN bars beautifully. It also allows us to include milk and white chocolate lovers, who have often asked for treats in this flavor family.

The Baked-to-Bar Series is more than chocolate. It is a little piece of our bakery’s heart, a taste of the treats you have loved.
